Özet: At least 40% of the amount of protein to be taken daily must be from animal sources in order to achieve adequate and balanced nutrition. Nutritional habits vary depending on environmental conditions, income, and customs. One of the most important source of animal protein that must be taken for physical and mental development is poultry. The fact that chicken meat is easier to find and cheaper than red meat increases the consumption rate of poultry every year. Chicken meat can be consumed without processing, as well as by processing it into various products. Chicken sausage, salami, sausage, bouillon and döner are examples for processed chicken meat. In this study, chicken meat and processed chicken meat products were compiled.
