Özet: Proteomics is defined as a powerful tool to analysis of the entire protein complement in a given cell, tissue or organism and also assesses localization , modifications, activities and interactions of proteins in complexes. This research was study proteomical changes under vernalization cold. seeds of Cheyenne winter wheat were grown in a controlled growth room at 20 °C for 14 days followed by transferring to 4 °C (experimental day 0) for 63 days (cold treatment), or they were maintained at 20 °C (control treatment). Leaf samples were taken on days 0, 21, 42 and 63 of the cold exposure. Leaf total protein extraction was carried out using IPG. The gels were analyzed by Progenesis software. Proteins that showed changes in expression were identified by mass spectrometry using MS/QTOF. Among the proteins that showed significant difference between two temperature treatments Patatin and Triticain alpha proteins. In this research results showed as increases in expression of Patatin and Triticain alpha proteins. Patatin appears to serve as a storage protein, but dissimilar other plant storage proteins. This protein also amazement enzymatic activities of nonspecific lipid acyl hydrolase. Patatin is not only a storage protein, but can also be part of the potato defence mechanism. Patatin can be considered as a nutrition-improving protein in the spectrum of total tuber protein. cysteine proteases include Triticain ,  and . Cysteine proteases (CPs) exist commonly in plants and are expressed in their various organs such as leaves, seeds, roots, stems and flowers. CPs are involved in digestion and post-translational modification of storage proteins as well as antibiotic responses and programmed cell death. In plant seeds, some CPs are involved in digestion of storage proteins during germination, energy supply and amino acid production for the subsequent plant growth. CPs are also known to process immature storage proteins for maturation.
