Özet: This study was conducted to identify the relationship between jatropha fruit maturity and its oil yield. In this research, image processing technique and L*a*b* color format were used to analyze the jatropha surface color. The soxhlet extraction method was chosen for extracting oil of jatropha. Correlation analysis was conducted to investigate the relationship between different maturity stages and oil yield. The result shows that a fruit which is dominated by the a* (redness) element has a potential to produce high oil yield. Thus, yellowish-brown was the optimum phase to harvest jatropha fruit.
