Özet: Due to the food industry was involved in past years in some major incidents that generated serious concerns from consumers regarding the food quality and safety, governments and non-governmental organizations have started to build and implement regulation and standards in food safety domain. A very important aspect is related to increasing the visibility through the food supply chain by implementing food traceability systems. According to Food and Agriculture Organization, in last 50 years, poultry meat consume has grown more than nine times and the average consume of poultry meat has grown more than four times, therefore this industry represents an important field of research for food safety and traceability. Paper will present an overview regarding main issues food traceability, after that being proposed and discussed architecture for a fresh poultry meat traceability system and presented future research directions.
