Özet: Rapid methods are needed for controling of food safety in the food industry. A large number of systems were developed with require of rapiddetection and identification methods. The techniques started to find applications in food engineering area to provide this need by thanks to advancesin the molecular field. At first microbiological analysis, genetically modified products, food ingredients and contaminants are also detected by thesemethods. The common methodological error probabilities in traditional methods have also been prevented by sensitivity of molecular methods.
