Özet: Chitosan polymers is from biopolymers group and obtained from deasetilation of chitin that is the basic materials ofarthropods. It has got no doubt that structural modification of chitin and chitosan usages will cause increases in many differentareas. Recent researchs were determined the antioxidant, antimicrobial, and anticarcinogenic effects of lowering cholesterol ofchitosan. Production of chitosan from chitin, can be made chemically and biologically. Chitosan can be soluble in acidicsolution unlike chitin. Chitin is mostly obtained from the shells of chitin-shelled creatures. In this study, It was aimed to lay aninformation about chitosan production methods from crustacean and properties and usege areas of chitosan.
