Özet: The Chinese culinary culture in Peru is never a closed circle. A constant and active communication with the system of “others” can be always noticed: in the daily language, the Peruvians borrow from the Chinese several names of food. Meanwhile, the “chifas” represented by San Joy Lao are able to innovate their menu by mixing Asian techniques with native ingredients. Under the circumstance of coexistence, Chinese food contributes to the maintenance of the original identity among the immigrants, and consists of a label for others to know and appreciate them as Chinese. It also offers an excellent way of the communication between different individuals and various ethnic groups. The popularity of Chinese cuisine in Peru marks the reunion of the two millenarian cultures, the integration of Chinese immigrants to this Latin American country and a new identity of the multi-ethnic society.
