Özet: The concept of eating out and the fast food sector have developed in Turkey since the 1980s. With the establishment of foreign-origin chain restaurants such as McDonald’s and Burger King operating in the fast food sector in Turkey, the hamburger became known and its popularity increased. In the following years, chain hamburger companies started to be established in Turkey. In recent years, the concept of boutique hamburger business has emerged and hamburger businesses have continued to develop as chain and boutique businesses. In this study, it is aimed to interpret the interaction between chain hamburger businesses and boutique hamburger businesses and to investigate the perspectives of customers on these businesses. In this context, Pino, the first and only local chain hamburger business in Eskişehir, and Buck’s Burger, a boutique hamburger business, are discussed. Interview technique, one of the qualitative research techniques, was used in order to obtain in-depth information in accordance with the purpose of the study. In-depth interviews were conducted with a total of eight participants, two hamburger business manager and six consumers. The influence of hamburger businesses in Eskişehir from each other has been examined from the perspective of chain and boutique businesses, and customer comments have also been added. As a result of the research, it has been understood that the enterprises continue their activities independently from each other and with minimum interaction. According to Buck’s Burger, Pino, which has been operating in Eskişehir for a longer time, is also more well-known. Bucks Burger continues to work as a boutique hamburger business to continue its activities as a sustainable business similar to Pino. It can be mentioned that there is a remarkable consumer group that prefers both businesses.Hamburgercism in Eskişehir: Pino and Buck’s Burger?
