Özet:
Mushrooms are use as therapeutics in alternative and complementary medicine as functional food because of contain a large number of biologically active components that offer health benefits and protection against many degenerative diseases. Morchella esculenta is one of the most highly priced edible mushrooms worldwide. It contains a wide range of active constituents which include tocopherols, carotenoids, organic acids, polysaccarides and phenolic compounds which exhibit a wide range of medicinal and pharmacological properties including anti-microbial, anti-inflammatory, immunustimulatory, antitumor and antioxidant. In this study; the peptide fragments were generated by alcalase hydrolysis from M. esculenta extracts were fractioned using ultrafiltration membranes.
